In a large brew kettle, heat 5 liters of water to about 67°C (152°F). Add the wheat malt and barley malt, stirring well. Maintain this temperature for 60 minutes to allow the grains to convert starches into sugars.

Mashing

After mashing, separate the liquid (wort) from the grain by pouring the mash through a fine mesh strainer or lautering tun. Rinse the grains with additional hot water to extract more sugars.

Lautering

Bring the wort to a boil, then add the hops. Boil for 60 minutes, adding the coriander seeds and dried orange peel during the last 10 minutes of boiling.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the yeast on top and seal the vessel with an airlock. Allow it to ferment in a cool, dark place for about 1-2 weeks, or until fermentation has stopped.

Fermentation

Once fermentation is complete, siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and let them carbonate for 1-2 weeks at room temperature.

Bottling

Chill the bottles in the refrigerator and serve the Hoegaarden in a glass, garnished with a slice of orange if desired.
