Prepare the Brisket

Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor. Rub the beef rub evenly over the brisket, ensuring all sides are coated.

Smoke the Brisket

Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for approximately 6-8 hours or until the internal temperature reaches 195°F (91°C).

Rest the Brisket

Remove the brisket from the smoker and wrap it in butcher paper or aluminum foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

Cube the Brisket

Once rested, cut the brisket into 1-inch cubes, ensuring to include some of the burnt edges for that crispy flavor.

Glaze the Burnt Ends

In a bowl, mix together your favorite BBQ sauce with a bit of honey or brown sugar. Toss the brisket cubes in the glaze until evenly coated.

Caramelize the Burnt Ends

Increase the smoker temperature to 275°F (135°C). Place the glazed burnt ends back in the smoker for an additional 1-2 hours, allowing them to caramelize and become tender.
