Prepare the Doughnut Holes

In a large bowl, mix together flour, sugar, baking powder, cinnamon, and salt. In another bowl, whisk together milk, eggs, and melted butter. Combine wet and dry ingredients until just mixed.

Fry the Doughnut Holes

Heat vegetable oil in a deep pot to 350°F (175°C). Using a small cookie scoop or spoon, drop batter into hot oil, frying until golden brown. Remove and drain on paper towels.

Coat with Cinnamon Sugar

In a small bowl, mix together sugar and cinnamon. While doughnut holes are still warm, toss them in the cinnamon sugar mixture.

Make the Anglaise

In a saucepan, combine cream, milk, and sugar; heat until sugar dissolves. In a separate bowl, whisk egg yolks. Slowly pour hot cream mixture into egg yolks, whisking constantly. Return to saucepan and cook over low heat until thickened. Stir in vanilla and white chocolate until melted.

Guava Jam

Prepare the Jam

In a saucepan, combine guava puree, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens, about 20 minutes. Let cool.
