Burger patties
Mix and form patties
Place the ground beef in a bowl. Add Worcestershire sauce, kosher salt, and black pepper. Gently mix with your hands or a fork until just combined—do not overwork. Divide into two equal portions and form into roughly 3/4-inch thick patties slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Cook patties
Heat a cast-iron skillet or heavy pan over medium-high heat and add 1 tablespoon vegetable oil, swirling to coat. When the pan is hot and shimmering, add the patties. Cook without moving for 3-4 minutes until a brown crust forms. Flip and cook for another 3 minutes for medium doneness (adjust 1-2 minutes for rarer/weller). During the last minute of cooking, place a slice of cheddar on each patty, cover the skillet with a lid or foil to melt the cheese.
Toppings & assembly
Prepare sauces and veggies
Lightly mix mayonnaise, ketchup, and mustard (optional: 1/2 tsp pickle juice or hot sauce) if you want a combined burger sauce. Arrange lettuce leaves, tomato slices, and onion rings so they are ready for assembly.
Assemble burgers
Spread about 1 tablespoon of the mixed sauce on the bottom bun (or mayonnaise if preferred). Place a lettuce leaf on the bun, then the cheddar-topped beef patty, followed by two slices of back bacon, 2 tomato slices, and several onion rings. Add pickles if using. Spread additional sauce on the top bun and place it over the stack. Lightly press to set.
Optional serving
Serve the Canadian Burger immediately with fries or potato wedges and extra ketchup or pickles on the side.
