Method

Proteins — Ground Beef

Cook beef

Heat a large skillet over medium-high heat. Add 1 tbs vegetable oil, then add 2 lb ground beef and break up with a spatula. Cook 6–8 minutes until browned and no pink remains.

Drain excess fat if necessary, return pan to medium heat. Stir in 3 tbs tomato paste, 1 cup water, 3 tsp chili powder, 2 tsp cumin, 2 tsp paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp dried oregano, 1 tsp salt and 1/2 tsp black pepper. Simmer 5–7 minutes until sauce thickens and flavors meld. Keep warm and cover.

Proteins — Chicken

Marinate & cook chicken

Slice 2 lb chicken breasts into thin strips. Toss with 1 tbs olive oil, 1 tbs lime juice, 2 tsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt and 1/4 tsp black pepper. Let rest 15 minutes if time allows.

Heat a large nonstick skillet or griddle over medium-high heat and add a thin film of oil. Cook chicken strips in batches 4–5 minutes per side until internal temperature reaches 165°F (74°C) and edges are lightly charred. Transfer to a serving pan and keep warm, squeezing remaining 2 tbs lime juice over top.

Prepare & cook fish

Pat 2 lb fish fillets dry and cut into 2–3 oz strips. Toss with 1 tbs olive oil, 1 tbs lime juice, 2 tsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp salt and 1/2 tsp black pepper. Let rest 10 minutes.

Heat a large nonstick skillet over medium-high heat with 1 tbs oil. Cook fish strips 2–3 minutes per side until opaque and flaky. Avoid overcooking. Transfer to a warm serving dish and sprinkle with chopped cilantro and a squeeze of lime.

Shells & Assembly

Warm soft tortillas: Stack tortillas, wrap in foil and warm in a 300°F (150°C) oven for 10–12 minutes or microwave covered with a damp paper towel for 30–45 seconds per 6 tortillas.

Warm hard shells: Place hard shells on a rimmed baking sheet and warm in a 300°F (150°C) oven for 5–7 minutes so they crisp but do not burn.

Set up taco bar: Arrange warmed hard and soft shells on the service table. Place protein pans (beef, chicken, fish) each with serving utensils. Provide small plates and tongs or spoons for toppings.

Toppings & condiments

Prepare toppings: Shred lettuce and place in a shallow bowl. Dice onion and place in a separate bowl. Place shredded cheese, sliced jalapeños, salsa, sour cream, cilantro and lime wedges in individual bowls with spoons or tongs.

Label bowls so guests know what each item is (salsa heat level, jalapeños pickled or fresh). Keep sour cream chilled on ice under the serving table if available.

Instructions for guests: Encourage guests to choose 2 proteins if offering all three. Recommend starting with a soft or hard shell, add 2–3 oz of protein, then top with lettuce, onion, cheese, salsa and a dollop of sour cream. Finish with cilantro and a lime squeeze.

Optional upgrades & sides

Salad upgrade (tossed): Toss mixed greens with dressing to taste just before serving so greens stay crisp. Offer the Caesar kit as an alternative (toss just before service). Charge per-person upgrade as needed.

Chips & salsa / guacamole: Place tortilla chips in baskets and bowls of extra salsa or guacamole nearby. Refill as necessary. Keep guacamole chilled and cover to prevent browning; stir in a squeeze of lime right before service.
