Muddle raspberries

Place 6 fresh raspberries in a shaker. Add the simple syrup. Using a muddler or the back of a spoon, gently muddle the raspberries until they are broken down and have released their juice and color (about 20–30 seconds).

Add spirits and citrus

Add 2 oz bourbon or rye whiskey and 0.75 oz fresh lemon juice to the shaker with the muddled raspberries.

Add egg white (optional)

If using an egg white for a silky foam, add 1 egg white to the shaker now. (Use pasteurized egg if preferred.)

Dry shake

Seal the shaker and shake vigorously without ice for 10–15 seconds. This 'dry shake' helps emulsify the egg white and incorporate air, producing a foamy texture.

Wet shake

Open the shaker, add 4 large ice cubes, re-seal, and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and well-chilled.

Strain

Double-strain the cocktail into a chilled coupe or rocks glass filled with about 1 cup of fresh ice (or serve up without ice if preferred). Use a fine mesh strainer in addition to the cocktail strainer to catch raspberry seeds and solids for a smooth drink.

Garnish

If desired, add 2 dashes of Angostura bitters on the foam and use a toothpick to create a small design. Garnish with a fresh raspberry or a lemon twist on the rim.

Serve immediately. Sip and enjoy the balance of bright raspberry and citrus against the warmth of the whiskey.
