Method
Pasta
Bring water to boil
In a large stockpot, bring 6 liters of water to a rolling boil. Add 2 tablespoons salt once boiling.
Cook pastas
Add the dried spaghetti and penne separately or together depending on pot capacity. Cook according to package directions until al dente (typically 8–11 minutes). Stir occasionally to prevent sticking.
Reserve 1 cup of pasta cooking water, then drain pasta in a colander. Toss each pasta with a tablespoon of olive oil (optional) to prevent sticking if holding before service.
Sauces & Proteins
Heat sauces
Transfer marinara and alfredo sauces to separate sauce pots. Warm over medium-low heat, stirring occasionally, until gently simmering. Maintain temperature at a low simmer for service (about 10–15 minutes to warm through).
Reheat proteins
Warm cooked meatballs, sliced Italian sausage, and sliced grilled chicken in a covered pan with a splash (2–4 tablespoons) of water or reserved pasta water until heated through (5–8 minutes). For meatballs, you may simmer them briefly in some marinara to infuse flavor.
Keep sauces and proteins covered and at serving temperature. Stir occasionally to maintain even heating and prevent scorching.

Prepare garnishes
Place grated parmesan, shredded mozzarella, red pepper flakes, chopped basil, chopped parsley, sliced olives, sautéed mushrooms, caramelized onions, and roasted red peppers into separate small bowls for guests to add as desired.
If using reserved pasta water to loosen sauce, add 1–2 tablespoons at a time until desired consistency is reached when tossing pasta with sauce.
Garlic Toast
Assemble and bake
Slice baguettes horizontally or into 1-inch slices. Spread garlic butter evenly on cut sides. Place on a baking sheet and bake in a preheated 375°F (190°C) oven for 8–10 minutes until golden at the edges. For crispier toast, broil 1–2 minutes watching carefully to avoid burning.
Service (Pasta Bar Setup)
Set up two warmed chafing dishes or steam tables for the pasta types so guests can choose spaghetti or penne. Keep lids on until service to maintain temperature.
Position warmed marinara and alfredo sauces in separate heated pans with ladles. Place warmed proteins (meatballs, chicken, sausage) in nearby containers with serving tongs or spoons.
Arrange the toppings and mix-ins in small bowls with spoons. Put grated parmesan and shredded mozzarella with appropriate serving utensils.
Provide signage with suggested combinations (e.g., spaghetti + marinara + meatballs, penne + alfredo + chicken) and note 'Add salad $1.99 per person'. Replenish items as needed during service.
