Prepare fries
Preheat oven to package instructions (typically 220°C / 425°F). Spread frozen French fries on a baking sheet in a single layer and bake according to package directions (about 20–25 minutes), flipping halfway, until golden and crispy. Keep warm when done.
Mix filling
In a large bowl combine ground beef, finely chopped onion, minced garlic, breadcrumbs, egg, KD powder packet, shredded cheddar, Worcestershire sauce, salt, and black pepper. Mix with your hands or a spoon until just combined; avoid overworking so bites stay tender.
Portion and shape
Divide the mixture into 12 equal portions (about 1.5 tablespoons each). Shape each portion into a tight 1–1.25 inch round or oval bite. Place formed bites on a tray and gently press to compact.
Coat bites
Put the flour in a shallow bowl. Lightly dredge each bite in flour, shaking off excess. This gives a thin crust and helps browning.
Pan-fry KD Bites
Heat vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F / 175°C). Working in batches to avoid crowding, add bites and cook 2–3 minutes per side until well-browned and internal temperature reaches 160°F (71°C). Adjust heat as needed so they brown without burning. Transfer cooked bites to a paper towel-lined plate to drain.
Optional: keep warm in oven
If making multiple batches, keep finished bites on a baking sheet in a 200°F (95°C) oven to stay warm and crisp while you finish frying the rest.
Prepare KD dip (optional)
If you want a cheesy dipping sauce, prepare 1 cup prepared KD macaroni & cheese (follow packet instructions) or melt 1/2 cup shredded cheddar with 1–2 tbs milk in a small saucepan over low heat until smooth.
