Prepare cactus pads
Using a sharp knife and a pair of tongs or gloves, remove the spines and the thorny edges from the cactus pads. Rinse pads under cold water. Pat dry with a kitchen towel. Slice pads into 1/8–1/4-inch thick strips or bite-sized chips (about 1–1.5 inch pieces). You should have roughly 4 cups sliced.
Blanch to remove slime
Bring a medium pot of water to a gentle boil. Add a pinch of salt. Add the sliced cactus pieces and blanch for 2–3 minutes, stirring once or twice; this reduces the natural mucilage (slime). Drain into a colander and immediately plunge the pieces into an ice bath to stop cooking. Drain well and pat very dry on clean towels or paper towels.
Toss with coating
In a large bowl, whisk together olive oil, lime juice, salt, pepper, smoked paprika, garlic powder, and optional cayenne. Add cornstarch and stir until a thin paste forms. Add the dried cactus pieces and toss thoroughly to coat each piece in the seasoned oil-cornstarch mixture. The cornstarch helps create crispness when baked.
Arrange and bake
Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper or a silicone mat. Spread the coated cactus pieces in a single layer with space between pieces (do not overcrowd). Bake for 10 minutes, then rotate the trays and flip pieces. Bake an additional 8–12 minutes until edges are browning and chips appear crisp. Watch closely near the end to avoid burning. Total bake time ~18–22 minutes depending on thickness.
Crisp finish
If chips are not crisp enough, switch oven to broil and broil for 30–60 seconds while watching closely until golden and crisp. Remove from oven and immediately transfer chips to a cooling rack so steam doesn't make them soggy. Sprinkle a final pinch of salt while hot. Let cool 5 minutes before serving.
Dill Dip
Combine base
In a medium bowl, whisk together Greek yogurt and mayonnaise until smooth and creamy.
Add flavorings
Stir in chopped fresh dill, lemon juice, lemon zest, minced garlic, honey, olive oil, salt, and pepper. Mix until combined. Taste and adjust seasoning — add more lemon for brightness, more dill for herbiness, or a touch more honey if you want sweetness to balance the acid.
Rest and chill
Cover the dip and refrigerate for at least 30 minutes (ideally 1–2 hours) to allow flavors to meld. If using, stir in chopped chives just before serving for fresh oniony notes.
Serve
Spoon into a small serving bowl, drizzle a few drops of olive oil on top and garnish with a sprig of dill if desired. Serve chilled alongside the Kactus Chips.
