Prepare the kactus: If using prickly pear pads or nopales, remove any remaining spines with a vegetable peeler or blowtorch, then rinse thoroughly. Pat dry. Slice each pad into thin strips or 1/8–1/4" (3–6 mm) slices lengthwise. Aim for uniform thickness so chips cook evenly.
Tenderize and dry: Place the slices on paper towels and sprinkle lightly with 1/4 teaspoon salt. Let sit 5–10 minutes to draw out moisture, then press with additional paper towels to remove excess liquid. Very dry surfaces help the batter adhere and crisp.
Make the batter: In a medium bowl whisk together the all-purpose flour, cornstarch, baking powder, remaining 3/4 teaspoon salt, black pepper, garlic powder, and smoked paprika until evenly combined.
Add cornmeal to a shallow dish: Place the fine cornmeal in a separate shallow plate — this will be used for additional crisp texture.
Whisk in liquid: Pour the cold club soda into the dry mixture and whisk just until combined. The batter should be slightly thick but still drippy; if too thick, add up to 2 tablespoons more cold water or soda. The cold, effervescent liquid gives extra lightness.
Heat oil: In a heavy skillet or deep frying pan, heat vegetable oil over medium-high heat to 350°F (175°C). If you don’t have a thermometer, test by dropping a small amount of batter — it should sizzle immediately and float.
Fry until golden and crisp: Carefully place battered slices into the hot oil in a single layer. Fry for 2–3 minutes per side, turning once, until golden brown and crisp. Adjust heat as needed to maintain oil temperature and avoid burning.
Drain and season: Using a slotted spoon or tongs, transfer chips to a wire rack set over a baking sheet or to paper towels to drain. Immediately squeeze a little lemon or lime over the chips and sprinkle a pinch of additional salt to taste.
Keep warm and serve: If frying multiple batches, keep finished chips in a single layer in a warm (200°F / 95°C) oven to stay crisp while you finish remaining slices. Serve hot with the dill dip.
Dill Dip
Combine base
In a medium bowl, whisk together the Greek yogurt and sour cream until smooth and homogenous.
Add flavorings
Stir in the chopped fresh dill, chives, minced garlic, lemon juice, Dijon mustard, salt, and black pepper until evenly distributed.
Adjust texture and chill
If you prefer a silkier dip, drizzle in the olive oil and whisk until incorporated. Taste and adjust seasoning with additional salt or lemon juice as needed. Cover and refrigerate for at least 30 minutes to allow flavors to meld (1–2 hours preferred).
Finish and serve
Before serving, give the dip a final stir and taste, adding a pinch more chopped dill or lemon if desired. Serve chilled alongside the hot Kactus Chips for dipping.
