Prepare components
Prepare chicken
If using leftover or rotisserie chicken, slice or shred into bite-size pieces. If using raw chicken breasts, poach gently in simmering salted water for 12–15 minutes until cooked through, then cool and slice. Season the sliced/shredded chicken lightly with 1/2 tsp salt and 1/2 tsp pepper.
Slice tomato and wash lettuce
Cut tomato into 1/4-inch thick slices. Pat lettuce leaves dry. Season tomato slices with remaining 1/2 tsp salt and 1/2 tsp pepper.
Make spread
In a small bowl, mix mayonnaise and Dijon mustard (if using) until combined. This will be spread on the bread slices.
Assemble and toast
Spread and layer
Place three slices of toasted bread on a work surface. On the unbuttered side of the bottom slice spread mayonnaise mixture (about 1 tsp). Top with 2 lettuce leaves, 1 slice of cheese, and half of the chicken (about 1 cup). Place the second slice of bread on top. On its unbuttered side spread mayonnaise, then add remaining lettuce, tomato slices (arrange evenly), remaining chicken, and two bacon strips (3 strips if you prefer more bacon). Place the final slice of bread on top, mayo side down.
Finish and secure
Press the sandwich gently to compress layers. Insert two toothpicks through the sandwich to hold it together. Repeat the process to make the second sandwich using the remaining three slices of bread and remaining fillings.
Serve
Cut each assembled sandwich diagonally into quarters (or halves) using a sharp serrated knife. Serve immediately with a pickle spear and extra bacon or chips on the side.
