Form patties
Divide the mixture into 6 equal portions (about 3 oz each). Gently form each into a flat round patty slightly larger than the slider buns to account for shrinkage when cooking. Press a shallow dimple in the center of each patty to prevent doming.
Cook patties
Heat a large skillet or cast-iron pan over medium-high heat and add a thin coating of oil or spray. When hot, add patties (work in batches if needed) and cook 2.5-3 minutes per side for medium, or until they reach your desired doneness (internal temp 160°F/71°C for well-done). During the last 30 seconds of cooking, top each patty with a piece of cheddar slice, cover the pan briefly with a lid to melt the cheese.
Fries
Preheat oven to 425°F (220°C) if roasting. For roasted fries: wash and dry potatoes, cut into 1/4- to 1/2-inch sticks, then toss in a bowl with vegetable oil, salt, pepper, and paprika. Spread in a single layer on a baking sheet and roast 25-30 minutes, flipping once halfway, until golden and crisp.
For pan-fried or deep-fried: heat 1/2-inch oil in a large skillet to medium-high. Add potato sticks in a single layer (work in batches), fry until golden and crisp, 6-8 minutes. Drain on paper towels and season with salt and pepper immediately.
Transfer fries to a serving platter and serve hot with the cheeseburger sliders.
