Burger Patties (choose up to 2 types)
Prepare and Season Patties
If using raw ground beef or chicken, portion into 4 oz (about 115 g) patties and press a slight indentation in the center of each to prevent doming. Lightly season both sides with kosher salt and freshly ground black pepper (about 1/4 tsp salt and a pinch of pepper per patty). For vegetarian patties, follow package instructions or form homemade patties and season similarly.
Cook Patties
Place patties on the hot surface without overcrowding. Cook beef patties 3–4 minutes per side for medium (internal temperature 160°F / 71°C for safety), chicken patties 5–6 minutes per side until internal temperature 165°F / 74°C, and vegetarian patties according to package or until heated through and browned, about 3–4 minutes per side. Avoid pressing down on patties so they retain juiciness.
Add Cheese (if desired)
During the last minute of cooking, top desired patties with cheese slices and close a lid or cover with foil to melt, about 30–60 seconds.
Rest Patties
Transfer cooked patties to a warm tray and tent loosely with foil. Let rest 3–5 minutes to redistribute juices before assembling.
Buns & Toppings
Prepare Buns
Split burger buns and toast cut sides on the grill or in a toaster for 30–60 seconds until lightly golden. Keep toasted buns warm on a tray.
Prepare Fresh Toppings
Core and slice tomatoes into even slices, peel and thinly slice red onion into rings, wash and dry lettuce leaves, and slice pickles if not pre-sliced. Arrange each topping in shallow serving pans or bowls for the burger bar so guests can assemble.
Set Condiments
Place ketchup, mustard, mayonnaise, and burger sauce in squeeze bottles or bowls with spoons. Label each condiment. Refill as needed during service.
Kactus Chips & Dill Dip
Make Dill Dip
In a medium bowl, whisk together plain Greek yogurt (3 cups) and mayonnaise (1 cup) until smooth. Add finely chopped fresh dill (3 tbsp), lemon juice (2 tbsp), garlic powder (1 tsp), onion powder (1 tsp), kosher salt (1 tsp) and freshly ground black pepper (1/2 tsp). Taste and adjust seasoning. Chill at least 30 minutes to let flavors meld.
Optional Upgrade: Tossed or Caesar Salad (extra $1.99 per person)
Tossed Salad (if chosen)
In a large bowl combine mixed salad greens (2 lbs), halved cherry tomatoes (2 cups) and sliced cucumber. Toss with vinaigrette just before service to prevent sogginess. Place croutons in a separate bowl for guests to add as desired.
Caesar Salad (if chosen)
Toss romaine hearts (2 lbs) with Caesar dressing (1 cup) in a large bowl until evenly coated. Transfer to serving pans and sprinkle grated Parmesan (3/4 cup) and croutons (2 cups) on top. Keep chilled until service and stir gently occasionally to redistribute dressing.

Set Up Burger Bar
Arrange warm patties in chafing dishes or on insulated trays with tongs, place toasted buns nearby, and set out bowls of toppings, condiments, chips and dip, and salads (if upgraded). Provide serving utensils and labels for each item (e.g., beef, chicken, veggie, cheese types, sauces).
Timing & Replenishment
Keep cooked patties covered and warm, replenish chips and toppings regularly, and monitor temperatures (hot food above 140°F / 60°C). Plan staffing so someone refreshes trays, replaces empty items, and maintains cleanliness throughout service.
Portioning Guidance
The quantities provided assume up to 16 servings (2 patties per person if desired across choices). Adjust quantities proportionally for fewer or more guests. Offer signage indicating portion suggestions (one patty per person standard, second patty optional).
