Prepare brisket
If using cold leftover brisket, warm it gently: place shredded or thinly sliced brisket in a small saucepan with 2 tbs beef au jus (or water) over low heat just until warmed, about 3–5 minutes. Stir in 1 tsp yellow mustard and 2 tbs barbecue sauce if using. Taste and season with 1/2 tsp freshly ground black pepper if needed. Remove from heat and keep warm.

Assemble sandwiches
Lay out 8 slices of bread. On 4 slices, spread 1/2 tbs whole-grain mustard each (optional). Divide the shredded cheddar and monterey jack evenly among the 4 mustard-spread slices, placing about 3/4 cup cheese mixture per slice. Top the cheese with about 1/2 cup warmed brisket per sandwich. Add pickled red onions (about 1/2 tbs) and two dill pickle slices on top of the brisket if using. Finish each sandwich with the remaining bread slices, pressing lightly to compress.
Butter bread
Spread 1 tbs softened butter on the outside of each of the 8 bread slices (both outer faces of each sandwich) so each assembled sandwich has buttered exterior on both sides.
Cook sandwiches
Heat a large skillet or griddle over medium-low to medium heat until hot but not smoking. Place two sandwiches in the skillet (do not overcrowd). Cook for 3–4 minutes per side, pressing lightly with a spatula or a heavy pan, until the bread is golden brown and cheese is melted. Adjust heat as needed so bread browns evenly without burning before cheese melts. For a thicker sandwich or faster melting, cover the skillet with a lid for 1–2 minutes during cooking to trap heat. Repeat with remaining sandwiches, adding up to 1 tbs butter to the pan between batches if needed.
Rest and slice
Transfer cooked sandwiches to a cutting board and let rest 1 minute. Using a sharp knife, slice each sandwich in half diagonally. Wipe skillet if making multiple batches to remove excess browned butter.
For dipping (optional)
Warm the beef au jus or barbecue sauce in a small saucepan over low heat until hot, about 2–3 minutes. Serve alongside the grilled cheese for dipping.
