Marinate and Cook Chicken

Pat 6 oz chicken breast dry and slice into 1/4-inch strips. In a bowl combine 1 tbs olive oil, 1/2 tsp smoked paprika, 1/4 tsp garlic powder, 1/4 tsp salt and 1/8 tsp black pepper. Toss the chicken strips in the marinade to coat. Heat a skillet over medium-high heat. Add a small drizzle of olive oil if pan is dry. Cook chicken strips 3–4 minutes per side until nicely browned and internal temperature reaches 165°F (74°C). Remove from heat and let rest 3 minutes, then thinly slice if necessary.

Make the Sauce

In a small bowl combine 2 tbs mayonnaise, 1 tsp Dijon mustard, 1 tsp honey, 1/2 tsp apple cider vinegar, 1/4 tsp Worcestershire sauce, 1/4 tsp hot sauce (optional), 1 tsp finely chopped parsley, 1/16 tsp black pepper and a pinch (1/16 tsp) salt. Whisk until smooth and taste; adjust honey or vinegar for sweetness/acidity. Chill briefly if preparing ahead.

Prepare Vegetables

Thinly slice 1/2 tomato and 1/4 red onion. If using avocado, slice half the avocado. Place 1 cup mixed greens on a clean work surface or plate. Lay the large flour tortilla flat and warm it in a dry skillet for 10–15 seconds per side or microwave for 10 seconds to make it pliable.

Build the Wrap

Spread about half of the signature sauce (approximately 1 tbs) down the center of the warmed tortilla. Layer the mixed greens evenly, then place the warm sliced chicken (6 oz) on top. Add tomato slices, red onion, 2 dill pickle slices, 1/4 cup shredded cheddar, and optional avocado slices and chopped bacon if using. Drizzle remaining sauce (about 1 tbs) over the filling. Squeeze a little lemon juice over the avocado and tomato if desired.

Roll and Finish

Fold the bottom edge of the tortilla up over the filling, fold in the sides, and roll tightly to enclose. Place seam-side down on the cutting board and, using a sharp knife, cut the wrap on the diagonal. If you prefer a warm, pressed finish, place seam-side down on a preheated panini press or skillet and press for 1–2 minutes until lightly toasted.

Serve the wrap whole or halved with extra signature sauce on the side for dipping. Garnish with a sprinkle of parsley if desired. Suggested accompaniments: kettle chips, fries or a side salad.
