Prepare jus base
In a medium saucepan over medium heat, melt 1 tablespoon unsalted butter. Add minced garlic and cook 20–30 seconds until fragrant (do not brown).
Add 2 cups beef broth, 1 tablespoon beef bouillon or demi-glace, 1 teaspoon Worcestershire sauce and 1 teaspoon soy sauce to the pan. Stir to combine and bring to a gentle simmer.
Season with 1/2 teaspoon salt and 1 teaspoon freshly ground black pepper. Simmer gently for 6–8 minutes to concentrate flavors, uncovered. Taste and adjust seasoning; keep warm on the lowest heat setting while you build sandwiches.
If you prefer a richer, thicker jus, remove 1/4 cup of the hot liquid to a small bowl and whisk in 1 teaspoon cornstarch (optional). Return to the saucepan and simmer 1–2 minutes until slightly thickened.

Caramelize onions (optional but recommended)
While the jus simmers, heat 1 tablespoon olive oil in a skillet over medium-low heat. Add thinly sliced onion and a pinch of salt. Cook, stirring occasionally, until soft and golden brown, 12–15 minutes. Remove from heat and set aside.
Toast rolls and assemble
Split the 4 rolls lengthwise without cutting fully through. Optionally spread 1 tablespoon mayonnaise mixed with 1/2 teaspoon horseradish (or use plain mayo and horseradish on the side) on the cut sides of each roll. Layer warm roast beef evenly among the rolls (about 4 oz per roll). Top the beef with sliced Swiss or provolone (2 slices per sandwich) and a spoonful of caramelized onions.
Place assembled open sandwiches under a broiler or in a hot oven (425°F / 220°C) for 2–3 minutes until cheese is melted and edges of the roll are lightly toasted. Watch closely to prevent burning.
Serve & Finish
Serve each sandwich with a ramekin of jus for dipping. Instruct diners to dip the sandwich into the jus before each bite for the classic beef dip experience.
Leftover jus can be refrigerated for up to 3 days and reheated gently. Reheat roast beef briefly in jus before serving.
