Prep
Bring ingredients together
Remove shaved sirloin from refrigerator to come close to room temperature (15–20 minutes). Slice onion and green pepper thinly and separate cheese slices so they are ready to layer.
Split the Amoroso roll lengthwise but keep hinge if desired. Lightly toast or set aside for finishing.
Cook vegetables
Sauté onions and peppers
Heat 1 tablespoon neutral oil and 1/2 tablespoon butter in a large skillet over medium-high heat until shimmering. Add the thinly sliced onion and green bell pepper in an even layer. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Cook, stirring occasionally, 6–8 minutes until the onions are soft and edges begin to brown. Reduce heat to medium-low and continue to cook 2–3 minutes until caramelized to your liking. Transfer vegetables to a bowl and keep warm.
Cook steak
Season shaved sirloin
In a small bowl combine Cajun seasoning (1 tsp), smoked paprika (1 tsp), garlic powder (1 tsp), remaining kosher salt (2 1/2 tsp) and remaining black pepper (3/4 tsp). Sprinkle and toss this blend evenly over the 8 oz shaved sirloin so pieces are lightly coated.
Sear shaved sirloin
Wipe the skillet used for vegetables clean or use a second heavy skillet. Heat the skillet over high heat until very hot. Add remaining 1/2 tablespoon butter and a quick swipe of neutral oil. Add the shaved sirloin in a single even layer; it will cook quickly. Let it sear undisturbed 30–45 seconds to develop color, then stir and spread again. Continue cooking 1–2 minutes total until just cooked through but still juicy. Taste and adjust seasoning if needed.
Assemble & melt cheese
Layer in roll
Place the split Amoroso roll open side up on a baking sheet or in an oven-safe skillet. If using mayonnaise, spread 1 tablespoon onto the cut sides. Pile the warmed steak, onions and peppers onto the bottom half of the roll in an even layer.
Add cheese and melt
Tear or place 3 slices of white American cheese over the hot steak and vegetables so it overlaps and covers the filling. Place the sandwich under a preheated broiler (or use a 400°F/200°C oven) for 1–2 minutes, watching closely, until the cheese is fully melted and just bubbling. Alternatively, cover the skillet with a lid for 30–60 seconds to melt the cheese.
If desired, scatter pickled jalapeños on top for extra heat, then close the sandwich and press lightly. Slice in half and serve immediately.
