Prepare oysters

Place the shucked oysters in a fine-mesh strainer over a bowl and let drain for 10 minutes. Gently blot each oyster dry with paper towels so excess liquid is removed but oysters remain plump.

Make dry mix

In a shallow bowl or rimmed plate combine all-purpose flour, cornstarch, cornmeal, kosher salt (1 tsp), black pepper (1/2 tsp), paprika, garlic powder, and cayenne (if using). Mix thoroughly. If using panko for extra crunch, mix it into the dry mix or reserve a separate panko plate for a double-dredge.

Prepare wet mix

In a separate shallow bowl whisk together the eggs, whole milk, and hot sauce until smooth. Taste and add a pinch of salt if needed.

Dredge oysters

Working in batches of 6–8 to avoid overcrowding, dredge each oyster first in the dry flour mixture, shaking off excess, then dip into the egg wash, letting excess drip back into the bowl, and finally press into the dry mix again (or into panko if using for added texture). Place breaded oysters on a wire rack set over a sheet pan while heating oil.

Heat oil

Pour vegetable oil into a heavy-bottomed skillet or Dutch oven to reach about 1 1/2 inches deep (approximately 3–4 cups depending on pan). Heat over medium-high until oil reaches 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test with a small breadcrumb: it should sizzle and brown in about 30–40 seconds.

Fry oysters

Carefully add breaded oysters in a single layer without crowding (6–8 at a time). Fry 1.5–2 minutes per side, turning once with a slotted spoon or tongs, until golden brown and pillowy. Maintain oil temperature around 340–360°F; reduce heat slightly if it rises. Total fry time per batch will be ~3–4 minutes. Transfer cooked oysters to a paper towel-lined tray or wire rack to drain and season immediately with a light sprinkle of salt.

Finish

Repeat dredging and frying with remaining oysters. Keep cooked oysters warm in a 200°F (95°C) oven on a sheet pan if frying in multiple batches.

House Tartar Sauce

In a small bowl combine mayonnaise, finely minced dill pickle, chopped capers, lemon juice, Dijon mustard, chopped parsley, salt, and black pepper. Stir until well combined. Taste and adjust seasoning—add more lemon for brightness or more pickle for tang. Refrigerate until ready to serve. Makes roughly 3/4 cup.

Cocktail Sauce

Whisk together ketchup, prepared horseradish, lemon juice, Worcestershire sauce, hot sauce (if using), and black pepper in a small bowl. Taste and adjust horseradish for desired heat. Refrigerate until serving. Makes roughly 3/4 cup.

Garnish & Serving

Arrange fried oysters on a platter lined with paper towels or a wire rack. Sprinkle chopped parsley over the oysters and serve immediately with lemon wedges, house tartar sauce, and cocktail sauce on the side. Recommend serving hot so the exterior stays crisp and the interior remains tender.
