Oysters

Keep oysters cold and on ice until just before serving. To present on a platter, mound crushed ice evenly on a large serving tray or individual plates to create a stable bed for the shells.

Arrange the shucked oysters on the ice, curved shell down so the liquor stays in the cup. Keep the oysters chilled while preparing sauces and garnishes.

Mignonette

Make mignonette

In a small bowl combine red wine vinegar, champagne vinegar, and the very finely minced shallot. Stir in freshly ground black pepper and sea salt until dissolved. Add chopped parsley if using. Let rest in the refrigerator at least 15 minutes to allow flavors to meld. Taste and adjust acidity or salt if needed.

Serve chilled in a small bowl or individual dipping spoons alongside the oysters.

Classic Cocktail Sauce

Make cocktail sauce

In a separate bowl combine ketchup, prepared horseradish, Worcestershire sauce, lemon juice, hot sauce and a pinch of salt. Stir until smooth and taste—add more horseradish for heat or more lemon for brightness. Chill until serving.

Transfer to a small serving bowl and place near oysters for guests to spoon onto each oyster as desired.

Citrus & Garnishes

Cut lemons and limes into wedges and arrange on the platter. Sprinkle chopped chives over the oysters or provide in a small bowl for sprinkling. Add microgreens or small pieces of seaweed to the ice bed around oysters for visual appeal.

Prepare hot butter sauce

Melt butter in a small saucepan over low heat. Add minced garlic and gently cook 30–45 seconds until fragrant but not browned. Remove from heat, stir in lemon juice and cracked black pepper. Taste and adjust seasoning. Keep warm until ready to serve.

To serve hot oysters: place oysters on a heatproof tray or broiler-safe pan, spoon a small amount of hot butter sauce over selected oysters, and briefly broil (1–2 minutes) or torch until the butter bubbles and the edges of the oyster curl slightly. Return to ice if serving cold selection alongside hot; clearly mark which oysters are hot.

Assembly & Service

Just before serving, reposition the oysters on the ice bed, open-side up with liquor retained. Place small bowls of mignonette and cocktail sauce on the platter along with lemon and lime wedges and optional chives and microgreens.

Provide cocktail forks, small spoons for sauces, napkins, and a discard bowl for empty shells. Advise guests to squeeze citrus or add a small spoonful of sauce to their oyster and enjoy.
