Make a dark roux

In a large heavy-bottomed Dutch oven or pot set over medium-low heat, melt the butter with the vegetable oil. Add the flour and whisk constantly. Keep heat at medium-low and continue whisking and stirring, allowing the roux to darken gradually to the color of milk chocolate — this takes about 20–30 minutes. Be patient: do not rush with higher heat or it will burn. If small lumps form, vigorously whisk or stir them out.

When the roux reaches a deep brown, immediately stir in the diced onion, bell pepper, and celery. Cook, stirring frequently, until vegetables are softened, about 6–8 minutes. Add the minced garlic and tomato paste and cook 1–2 minutes more until fragrant.

Slowly whisk in 1 cup of the chicken stock to deglaze and thin the roux mixture, scraping any browned bits from the bottom. Once incorporated, gradually whisk in the remaining 5 cups of stock until smooth.

Add bay leaves, Worcestershire sauce, hot sauce, kosher salt, and black pepper. Increase heat to medium and bring the pot to a gentle simmer.

Proteins & Add-ins

While the base simmers gently, prepare the proteins: if your smoked chicken isn't already shredded, remove skin/bones and shred or chop into bite-sized pieces. Slice the Andouille into 1/4-inch rounds.

Add the sliced sausage to the simmering gumbo and cook 8–10 minutes so some fat renders and flavor melds into the broth.

Stir in the smoked chicken and sliced okra. Continue to simmer uncovered, gently stirring occasionally, for 10–12 minutes so flavors combine and okra softens but retains some texture. Taste and adjust seasoning: add up to 1 tsp more salt or more hot sauce to taste.

Seasoning & Finish

Stir in Creole/Cajun seasoning and chopped parsley. Remove the pot from heat and add the lemon juice. If using file powder, sprinkle it in now and stir gently to avoid further thickening; file is optional and adds a savory, slightly thick finish.

Discard bay leaves. Let the gumbo rest 5 minutes off heat so flavors settle. Serve gumbo hot over cooked white rice, garnished with sliced scallions and an extra sprinkle of parsley or a dash of hot sauce if desired.
