Tostadas & Base

    Preheat oven to 350°F (175°C). If using store-bought tostada shells, warm them on a baking sheet for 5–7 minutes until crisp. For extra flavor, melt the butter and brush lightly on both sides of each shell, then sprinkle with 1 tsp sea salt and a 1 tbsp squeeze of lime juice; return to oven 2–3 minutes to set.

Crab Salad

    Gently pick through lump crab meat to remove any cartilage or shells. Place crab in a bowl and add the diced cucumber, sliced chives, orange zest, lime zest, 1/2 tsp fine sea salt and 1/4 tsp black pepper. Fold ingredients gently to avoid breaking up the crab lumps. Taste and adjust seasoning. Cover and refrigerate while you prepare the other components so flavors meld (10–15 minutes).

Serrano Aioli

    In a small bowl, combine 1/2 cup mayonnaise, minced garlic, finely chopped serrano (use half seeded, reserve half for garnish if desired), 1 tsp lemon juice, 1 tsp olive oil and 1/4 tsp salt. Whisk until smooth. Taste and adjust heat or acidity. Chill until assembly.

Hibiscus-Guajillo Gastrique

    Infuse

    In a small saucepan, add 1/2 cup water and bring to a simmer. Add dried hibiscus flowers and torn guajillo pieces, remove from heat, and steep for 10 minutes to rehydrate and infuse color and flavor.

    Strain & Reduce

    Strain the infusion through a fine-mesh sieve, pressing to extract liquid. Discard solids. Return liquid to the saucepan and add 1/2 cup white wine vinegar and 1/4 cup sugar. Bring to a gentle simmer over medium-low heat, stirring until sugar dissolves.

    Finish Gastrique

    Reduce the mixture until it reaches a syrupy consistency (about 8–12 minutes) and coats the back of a spoon. Stir in 1/4 tsp salt to balance acidity. Remove from heat and let cool slightly; it will thicken more as it cools. Taste and adjust sweetness or acidity with small additions of sugar or vinegar if needed.

Crunch & Garnish

    Toast the sliced almonds in a dry skillet over medium heat, stirring, until fragrant and lightly golden (2–3 minutes). Remove from heat and cool.

    Toss frisée lightly with a squeeze of lime (from the citrus wedges) and a pinch of salt to brighten. Thinly slice the reserved serrano into rounds for garnish.

Assembly

    Place warmed tostada shells on a platter. Spread a thin layer (about 1 tsp) of serrano aioli on each shell to act as a barrier and add flavor.

    Heap approximately 1.5 oz (about 3 tablespoons) of the crab salad onto each aioli-coated tostada, keeping the lumps intact for texture and presentation.

    Place a small nest (about 1 tablespoon) of dressed frisée atop each crab portion for brightness and crunch.

    Drizzle the hibiscus-guajillo gastrique over each tostada in a thin line (about 1/2 tsp–1 tsp per tostada) to add sweet-tart and smoky notes. Use more or less to taste.

    Scatter toasted almonds (about 1 tbsp total, divided among tostadas) and chive tips or micro cilantro over each. Add 1–2 serrano slices to each for heat and visual contrast.

    Finish with a light grind of black pepper and an optional extra squeeze of citrus. Serve immediately so tostadas remain crisp.
