Tortilla Chips

Cut and dry
Stack tortillas and cut into 6 or 8 wedges each to make chips (12 tortillas → ~72 chips if cut into 6). Pat wedges dry with paper towels to remove surface moisture.

Fry chips
Fry tortillas in batches, 6–8 wedges at a time, for 45–90 seconds per side until golden and crisp. Use a slotted spoon to transfer chips to a paper towel–lined tray.

Season
While still warm, sprinkle chips with kosher salt (about 1 tsp total) and toss gently to distribute. Let cool to room temperature — chips will crisp further as they cool.
Roasted Tomato Salsa (Salsa Roja)

Blend
Remove skins from garlic (if loose). Place roasted tomatoes, serranos (stemmed; remove seeds for milder heat if desired), roasted onion, garlic, cilantro, lime juice, 0.75 tsp kosher salt and 0.25 tsp black pepper in a blender or food processor. Pulse to desired texture — for a chunky salsa pulse less, for smoother salsa blend 20–30 seconds.

Adjust and rest
Taste and adjust seasoning with more salt or lime as needed. Transfer to a bowl and let rest 15–30 minutes at room temperature to allow flavors to meld.
Fresh Pico de Gallo

Combine
In a medium bowl, combine diced tomatoes, jalapeño, red onion, cilantro, 1 tbsp lime juice, 0.5 tsp kosher salt and 0.25 tsp black pepper. Toss gently to combine.

Chill briefly
Let pico rest in the refrigerator for 10–15 minutes to allow flavors to marry, then taste and adjust salt or lime if needed. Serve chilled or at cool room temperature.
Charred Tomatillo Salsa (Salsa Verde)

Cool
Transfer salsa verde to a bowl and cool to room temperature for 15 minutes before serving. Refrigerate any leftovers within 2 hours.
