Prepare glass

Chill a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you build the cocktail; discard the ice water before serving.

Build and shake

In a cocktail shaker, add Hendrick's gin (1.5 oz), Brugal Añejo (0.75 oz), fresh pineapple juice (2 oz), passionfruit purée (0.75 oz), fresh lime juice (0.5 oz), simple syrup (0.5 oz), cold brewed black tea (1 oz), and 2 dashes of Angostura bitters. Fill the shaker with plenty of ice (about 1 cup).

Shake

Secure the shaker lid and shake vigorously for 10–15 seconds until the outside of the shaker becomes frosty and well chilled. This chills and slightly dilutes the mix for balance.

Double strain and serve

Discard the chilling ice from the glass. Double-strain the cocktail (through the shaker strainer and a fine mesh strainer) into the chilled highball/Collins glass filled with fresh ice.

Garnish & Finish

Top the drink with a sprig of fresh mint (slap it gently between your hands to release the aroma) and rest a pineapple wedge and a thin lime wheel on the rim or float them in the drink. Optionally add one additional dash of Angostura bitters on top of the foam for aroma.

Serve with a short stirring straw and advise the drinker to give it a gentle stir before sipping to marry the tea and fruit notes.
