Punch Base

Method

Punch Base

1

Combine juices

In a large pitcher (about 2–3 liters), pour 4 cups pineapple juice, 1 cup passionfruit puree or juice, and 1 cup fresh lime juice. Stir gently to combine.

2

Sweeten

Add 1/2 cup simple syrup and stir until fully incorporated. Taste and adjust: if you prefer sweeter, add up to 2 tablespoons more simple syrup; for tarter punch, add a little more lime juice (up to 2 tablespoons).

Sparkle & Chill

3

Just before serving, add 2 cups chilled club soda or sparkling water to the pitcher to preserve effervescence. Stir gently once to combine.

4

Add 6 cups of cubed ice to the pitcher or into an ice-filled punch bowl to chill the mixture; alternatively, use a large ice ring so the punch doesn’t get diluted quickly.

Garnish

5

Add 1 cup pineapple wedges or chunks and 6 lime wheels to the punch for visual appeal and flavor. If using, scoop the pulp from 2 halved passionfruits into the pitcher for texture and extra aroma.

6

Float 6–8 mint sprigs on top for aroma. Reserve a few lime wheels and a pineapple wedge per serving to garnish individual glasses.
