Rim & Preparation

prepare rim

Combine the kosher salt and chilli flakes on a small shallow plate and mix evenly. Run the lime wedge around the outer edge of a chilled martini glass to moisten the rim. Dip the moistened rim into the salt-chilli mixture, twisting to coat evenly. Set the glass aside.

chill glass (optional)

If not already chilled, place the rimmed martini glass in the freezer for 5 minutes to firm the rim coating and chill the glass.

Mixing the Cocktail

combine ingredients

Fill a cocktail shaker with the ice. Add the vodka, Aperol, pineapple juice, and fresh lime juice to the shaker.

Secure the shaker lid and shake vigorously for 12–18 seconds, until the shaker is very cold and the exterior is frosted. This chills and slightly dilutes the mixture for balance.

double strain and serve

Remove the martini glass from the freezer (if chilled). Using a Hawthorne strainer, pour the cocktail through the shaker into the prepared martini glass. For a cleaner texture, double-strain through a fine mesh strainer to catch any small ice shards or pulp.

garnish

Thread the pineapple wedge or place the pineapple wheel on the rim (opposite the salted chilli area) or float it in the drink. Optionally rub the lime wedge over the top of the rim garnish area for extra aroma.
