Juice and measure

Roll one orange on the counter and cut; juice until you have 60 ml (about 1 small orange). Measure 10 ml fresh lemon juice and 10 ml simple syrup.

Combine and stir

In a mixing glass or shaker, add 4 tbs non-alcoholic gin, the measured orange juice, lemon juice, and simple syrup. Fill the mixing glass with ice (approx. 1 cup). Stir gently for 10–15 seconds to chill and lightly dilute.

Prepare glass

Fill a highball or copa-style glass with fresh ice (top with the 1 cup of ice if not already in the mixing glass).

Strain and top

Double-strain the chilled mocktail base into the prepared glass to remove ice shards and pulp. Top gently with 120 ml Mediterranean tonic water, pouring slowly to preserve effervescence.

Garnish and aromatics

Express the oils of an orange peel over the drink or add an orange wheel on the rim. Clap the rosemary sprig between your hands to release aromatics and place it in the drink as a garnish.

Serve immediately while cold and fizzy.
