Method
Coconut Italian Meringue
1. Prepare syrup
Combine the granulated sugar and water in a small heavy-bottomed saucepan. Place a candy thermometer clipped to the side. Bring to a boil over medium-high heat and cook without stirring until the syrup reaches 240°F (115°C) — soft-ball stage. This takes roughly 6–8 minutes. Reduce heat to low to hold if needed.
3. Combine syrup and whites
With the mixer running on low, slowly and carefully pour the hot sugar syrup in a thin steady stream down the side of the bowl into the whipping egg whites. Once all syrup is added, increase speed to high and whip until glossy, stiff peaks form and the bowl is cool to the touch (about 6–8 minutes).
4. Flavor and finish
Add the vanilla extract and coconut milk, then briefly mix on low just to incorporate. Fold in the desiccated coconut if using. Transfer meringue into a piping bag fitted with a round or star tip, or use immediately to toast or pipe decorations.
Coconut Ice Cream (Quick No-Churn)
1. Prepare base
In a bowl, whisk the canned coconut milk, sweetened condensed coconut milk, vanilla extract and a pinch of salt until smooth. Taste and adjust sweetness.
2. Freeze
Pour mixture into a loaf pan or airtight container. Sprinkle in toasted shredded coconut and stir briefly to distribute. Cover and freeze 4–6 hours until firm (or overnight). Remove 10 minutes before serving to soften slightly.
Dark Chocolate Tuile
1. Melt chocolate
Gently melt the chopped dark chocolate with butter (or coconut oil) in a heatproof bowl over a small pot of simmering water (double boiler) or in short bursts in the microwave, stirring until smooth. Stir in cocoa powder and caster sugar until combined and glossy.
2. Form tuiles
On a silicone mat or parchment, spread thin, even rounds or elongated teardrop shapes about 2–3 mm thick using an offset spatula. Work quickly — chocolate sets as it cools. If you want curved tuiles, transfer a few to the edge of a rolling pin while still pliable and let cool to set curved shape.
3. Chill and store
Chill tuiles in the refrigerator for 10–15 minutes to set fully. Handle gently; store in an airtight container until plating.
Dark Chocolate Sauce
1. Heat cream
Heat the cream (or coconut cream) in a small saucepan until just simmering — do not boil.
Assembly & Garnish
1. Plate components
Spoon a smear or pool of dark chocolate sauce onto each plate (about 1–2 tbs). Place a quenelle or scoop of coconut ice cream on the sauce.
2. Add meringue
Pipe or place a meringue shape beside or atop the ice cream. For a toasted finish, use a culinary blowtorch to gently brown peaks of the Italian meringue until golden (keep torch moving to avoid burning).
3. Finish
Lean a dark chocolate tuile into the ice cream or meringue for height. Sprinkle toasted coconut flakes and chocolate shavings over and around the plate. Serve immediately so meringue remains glossy and ice cream cold.
