Method
Prepare Yuca Fries
Peel and Cut Yuca
Peel the yuca root and cut it into thick sticks, about 1/2 inch wide.
Boil Yuca
In a large pot, bring water to a boil. Add the yuca sticks and boil for about 15-20 minutes until they are tender but not falling apart. Drain and let cool.
Heat Oil
In a deep frying pan, heat the vegetable oil over medium heat until hot.
Fry Yuca
Carefully add the cooled yuca sticks to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Sprinkle with salt.
Prepare Garlic Aioli
Mix Ingredients
In a bowl, combine mayonnaise, minced garlic, lemon juice, and olive oil. Mix well until smooth.
Season
Season with salt and black pepper to taste. Adjust lemon juice for desired tanginess.
