Make the Dough

In a large bowl, mix the masa harina and salt. Gradually add water, mixing with your hands until a soft dough forms. If the dough is too dry, add a little more water.

Prepare the Filling

In a separate bowl, combine the mashed black beans, grated zucchini, and shredded cheese. Mix until well combined.

Form the Pupusas

Divide the dough into equal-sized balls (about the size of a golf ball). Flatten each ball into a disc, then place a spoonful of the filling in the center. Carefully fold the edges over the filling to encase it, then gently flatten it again into a disc.

Cook the Pupusas

Heat a skillet or griddle over medium heat and add a little vegetable oil. Cook each pupusa for about 4-5 minutes on each side, or until golden brown and slightly crispy.

Serve

Serve hot with curtido (a fermented cabbage slaw) and salsa roja if desired.
