Fries

Method

Fries Preparation

1

Prepare the Potatoes

Peel the Russet potatoes and cut them into even-sized fries. Rinse them under cold water to remove excess starch.

2

Fry the Potatoes

Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt to taste.

Gravy Preparation

3

Make the Gravy

In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously to create a roux, cooking for about 2-3 minutes until it turns a light golden color.

4

Add Broth

Gradually add the beef broth while whisking to avoid lumps. Stir in the soy sauce and black pepper. Bring to a boil, then reduce heat and simmer for about 5-10 minutes until thickened.

Assembly

5

Assemble the Poutine

Place a generous portion of fries on a plate, top with cheese curds, and pour the hot gravy over the top. Serve immediately.
