Method
Prepare the Fish
Make the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer, stirring until smooth.
Heat the Oil
In a deep fryer or large pot, heat the oil to 350°F (175°C).
Coat the Fish
Dip each haddock fillet into the batter, allowing excess to drip off.
Fry the Fish
Carefully place the battered fish into the hot oil. Fry for 4-5 minutes on each side until golden brown. Remove and drain on paper towels.
Prepare the Fries
Cut the Potatoes
Cut the potatoes into fries of desired thickness.
Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
Fry the Fries
Remove fries from water, pat dry, and fry in the same oil used for the fish until golden and crispy, about 5-7 minutes.
Season the Fries
Remove fries from oil, drain on paper towels, and season with salt.
Prepare the Jalapeno Tartar Sauce
Mix the Ingredients
In a bowl, combine mayonnaise, chopped dill pickles, minced jalapenos, lemon juice, salt, and pepper. Mix well and adjust seasoning to taste.

Plating
Serve the fish and chips hot, accompanied by jalapeno tartar sauce and lemon wedges.
