Citrus Marinated Roast Pork

Prepare the Marinade

In a large bowl, combine orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Mix well to combine.

Marinate the Pork

Place the pork shoulder in a resealable plastic bag or dish and pour the marinade over it. Seal or cover and refrigerate for at least 4 hours, preferably overnight.

Roast the Pork

Preheat the oven to 325°F (160°C). Remove the pork from the marinade and place it in a roasting pan. Roast for about 2.5 to 3 hours, or until the internal temperature reaches 190°F (88°C). Let it rest for 15 minutes before slicing.

Assemble the Sandwich

On the bottom half of the baguette, layer the sliced roast pork, smoked ham, Swiss cheese, and pickled jalapeños. Spread yellow mustard on the top half of the baguette.

Press the Sandwich

Close the sandwich and press it using a panini press or a heavy skillet. Cook until the bread is toasted and the cheese is melted, about 5-7 minutes.

Cut the sandwich in half and serve hot with fries or salad on the side.
