Marinate the Beef

In a bowl, mix soy sauce with sliced beef tenderloin. Cover and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Pickled Carrots

Peel and julienne the carrots. In a separate bowl, combine rice vinegar, sugar, and a pinch of salt. Mix well and add the carrots, letting them sit for at least 30 minutes to pickle.

Prepare Skewers

If using wooden skewers, soak them in water for 30 minutes to prevent burning. Cut the scallions into 2-inch pieces.

Assemble Skewers

Thread marinated beef, scallions, and pickled carrots onto the skewers, alternating between the ingredients.

Cook the Skewers

Preheat a grill or grill pan over medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally until the beef is cooked to your desired doneness.

Serve

Remove the skewers from the grill, sprinkle with sesame seeds, and serve warm with extra pickled carrots on the side.
