Prepare the Pork

Cut the pork belly into small cubes. Heat a large skillet or wok over medium-high heat and add the pork belly. Cook until crispy and browned, about 5-7 minutes. Remove the pork from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add the diced bell pepper and the white parts of the chopped scallions. Sauté for 3-4 minutes until tender.

Combine Ingredients

Add the cooked rice to the skillet with the vegetables. Stir well to combine. Return the crispy pork belly to the skillet and mix everything together. Season with salt and pepper to taste.

Finish the Dish

Remove the skillet from heat. Stir in the lime juice, chopped cilantro, and the green parts of the scallions. Mix until well combined.
