Prepare the Pork

In a slow cooker, combine pork shoulder, soy sauce, minced garlic, and black pepper. Cook on low for 6-8 hours or until tender.

Make Pickled Vegetables

In a bowl, mix the julienned carrot and daikon radish with vinegar, sugar, and salt. Let it sit for at least 30 minutes to pickle.

Prepare Cilantro Crema

In a blender, combine sour cream, cilantro, lime juice, and salt. Blend until smooth.

Assemble Tacos

Once the pork is cooked, shred it and fill the taco shells with pork, pickled vegetables, jalapeños, and drizzle with cilantro crema. Top with fresh cilantro.
