Marinate the Pork Belly

In a large bowl, combine soy sauce, honey, minced garlic, and grated ginger. Add the pork belly cubes and mix well to coat. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

Prepare the Skewers

Thread the marinated pork belly onto skewers, leaving space between each piece for even cooking.

Make the Peanut Sauce

In a small bowl, mix together peanut butter, lime juice, and a pinch of salt. Add water, a tablespoon at a time, until desired consistency is reached.

Grill the Skewers

Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the pork is cooked through and has a nice char.

Serve

Remove the skewers from the grill and let them rest for a few minutes. Serve with the peanut sauce drizzled on top, garnished with chopped scallions and sliced chili.
