Prepare Tomato Confit

Preheat oven to 300°F (150°C). Cut tomatoes in half, drizzle with olive oil, sprinkle with salt and pepper, and place on a baking sheet. Roast for about 2 hours until soft and caramelized.

Cook Bacon

In a skillet, cook bacon over medium heat until crispy. Remove and drain on paper towels. In the same skillet, sprinkle brown sugar over the bacon and allow it to caramelize slightly.

Cook Sausages

In the same skillet, add sausages and cook until browned and cooked through, about 6-8 minutes. Remove and let rest.

Sauté Mushrooms

In the same skillet, add sliced mushrooms and sauté until golden brown. Season with salt and pepper.

Cook Eggs

In a separate pan, cook eggs to your preference (fried, scrambled, or poached).

Toast Country Bread

Toast the slices of country bread until golden and crispy.

Assemble the Plate

On a serving plate, arrange the toasted bread, layer the baked beans, add the eggs, top with bacon and caramelized tomatoes, sausage, and mushrooms. Serve immediately.
