Roast the Lamb
Place the lamb in a roasting pan and roast in the preheated oven for about 25-30 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (internal temperature should be around 60°C/140°F for medium-rare).
Rest the Lamb
Once the lamb is done roasting, remove it from the oven and let it rest for 10 minutes before slicing.
Serve
Slice the lamb loin and serve it on a plate alongside the white bean salad and drizzle with Navarra sauce.
