Marinate the Chicken

In a bowl, mix the miso paste, soy sauce, and a tablespoon of lime juice. Add the chicken thighs and coat them well. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Peanut Sauce

In a saucepan over medium heat, combine the peanut butter, coconut milk, brown sugar, and remaining lime juice. Stir until smooth and well combined. Allow it to simmer for about 5 minutes. Remove from heat and set aside.

Prepare the Vegetables

Slice the Fresno chilies and green apple thinly. Set aside for serving.

Skewer the Chicken

Preheat the grill or grill pan over medium-high heat. Thread the marinated chicken thighs onto skewers.

Grill the Chicken

Grill the skewers for about 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks.

Serve

Serve the chicken skewers with peanut sauce, pickled Fresno chilies, sliced green apple, and a garnish of fresh mint and dill.
