Prepare batter
In a medium bowl whisk together 1 cup all-purpose flour, 2 tsp baking powder, 1 tbsp granulated sugar, and 1/4 tsp salt until combined. In a separate small bowl whisk 1 large egg with 3 tbsp milk (plus the additional 3 tbsp milk/buttermilk) and 1 tbsp melted butter. Pour the wet ingredients into the dry and stir gently until just combined — small lumps are fine. Do not overmix. Let batter rest 5 minutes while you heat the griddle.

Cook pancakes
Heat a nonstick griddle or large skillet over medium heat. Brush or spray with 1 tsp oil and a little extra butter (about 1 tsp) to prevent sticking. For each pancake, pour about 1/3 cup batter onto the hot surface. Cook until bubbles form on the surface and edges look set, about 2 to 3 minutes. Flip and cook until golden and cooked through, 1 to 2 minutes more. Keep cooked pancakes warm on a plate covered loosely with foil or in a low oven (90–100°C / 200°F).

Serve
Stack three pancakes per serving, top with 1 tbsp butter (optional) and 3 tbsp maple syrup. Add optional fresh fruit if desired.
Choice of Three Meats

Bacon
Heat a skillet over medium heat. Lay 3 bacon strips in a single layer and cook for 3–5 minutes per side, depending on thickness and desired crispness. Transfer to a paper towel-lined plate to drain. If cooking in the oven: preheat to 200°C (400°F) and bake on a rack-lined sheet for 12–18 minutes until crispy.

Sausage links
For 2 breakfast sausage links, heat a skillet over medium-low and add the links. Cook, turning frequently, until browned and cooked through, about 10–12 minutes (internal temperature 71°C / 160°F). Reduce heat if they are browning too quickly to allow the center to cook.

Timing tip
Start meat first (bacon or sausage) and keep warm in low oven while you cook pancakes and eggs so everything finishes hot together.

Potatoes (home fries/hash browns)
If using prepared home fries or leftover cooked potatoes (1 cup), heat 1 tbsp oil in a skillet over medium-high. Add potatoes in a single layer, season with 1/2 tsp salt and 1/4 tsp black pepper, and cook, turning occasionally, until crispy and heated through, about 6–8 minutes. Transfer to plate and keep warm.

Eggs (two eggs, cooked to order)
Reduce skillet heat to medium-low and add 1 tbsp unsalted butter. Crack 2 large eggs into a small bowl first (to avoid shells) then gently slide eggs into the skillet. For sunny-side-up: cover skillet and cook until whites are set but yolks still runny, about 3–4 minutes. For over-easy: cook until whites set, flip carefully and cook 15–20 seconds more. For scrambled: whisk the eggs briefly with a pinch of salt and pepper, pour into buttered skillet, let set slightly then stir gently until soft curds form. Season with additional salt and pepper to taste.
