Prepare dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 1 tablespoon granulated sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt until evenly combined.

Combine wet ingredients
In a separate bowl, beat 1 large egg then whisk in 1 cup whole milk and 2 tablespoons melted unsalted butter until combined.

Make batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy—do not overmix. Let the batter rest for 5 minutes while you heat the pan.

Cook pancakes
For each pancake, pour about 1/4 cup batter onto the hot griddle. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook until golden brown on the second side, about 1–2 minutes more. Repeat to make 6–8 small pancakes (or 3 larger), adding more butter or oil as needed between batches. Keep cooked pancakes warm on a plate tented with foil.

Cook the meat
Heat a 10–12 inch skillet over medium heat and add 1 teaspoon olive oil. Add 3 breakfast sausage links or patties and brown, turning occasionally, until cooked through (internal temperature 160°F / 71°C for pork), about 8–10 minutes for links or 6–8 minutes for patties. Transfer to a plate and keep warm.

Prepare eggs
While the meat cooks (or after, if preferred), crack 2 large eggs into a bowl, add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until blended.

Cook scrambled eggs
Reduce heat to low–medium and add 1 teaspoon unsalted butter to the same skillet (or a clean nonstick pan) and let it melt, coating the pan. Pour in the egg mixture. Allow eggs to set briefly around the edges (10–15 seconds), then gently push eggs from the edges toward the center with a spatula, forming large soft curds. Continue folding until eggs are mostly set but still moist, about 1–2 minutes. Remove from heat just before fully firming—the residual heat will finish them. Plate immediately alongside pancakes and meat.
