Bring eggs to room temp (optional)
If you have time, let the eggs sit at room temperature for 5–10 minutes; they cook more evenly. This step is optional.

Crack the 2 large eggs into a small bowl and whisk lightly with a fork until combined. Season with 1 tsp salt and 1/4 tsp black pepper.

Heat a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown.

Pour the whisked eggs into the pan. Let them sit undisturbed for about 20–30 seconds until edges begin to set, then gently stir with a silicone spatula, pushing the eggs from the edges toward the center. Continue occasionally stirring and folding for 1–2 minutes until eggs reach a soft, slightly creamy texture. Remove from heat just before fully set — they will finish cooking off the heat.

Transfer eggs to a plate and keep warm while you finish other components.
Side (hashbrowns)

While the eggs are resting, heat a medium nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat.

If using frozen hashbrowns, spread 1 cup in an even layer in the hot pan. For fresh grated potato, press out excess moisture and spread similarly.

Press the potatoes down with a spatula and let cook undisturbed for 3–4 minutes until the underside is golden brown and crisp.

Flip or break into sections and continue cooking another 3–4 minutes until crisp and cooked through. Season with 1/2 tsp salt and 1/8 tsp black pepper. Transfer to plate and keep warm.

If using sausage links/patties: heat a small skillet over medium heat and add 1/2 tsp oil. Add the 2 sausages and cook 3–5 minutes per side (depending on thickness) until browned and cooked through (internal temperature 160°F/71°C for pork). If using bacon, lay strips in a cold pan and cook over medium heat, turning, until crisp (about 6–8 minutes).

Transfer cooked meat to a paper-towel-lined plate to drain and keep warm.
Toast

While the meat finishes, toast 2 slices of bread to your desired level in a toaster or in a skillet.

Spread 1 tablespoon unsalted butter over the hot toast so it melts, then cut or serve whole.
Plating and finishing

Arrange the 2 eggs, the hashbrowns, the 2 pieces of toast, and the cooked meat on a plate. Add extra salt and pepper to taste and serve immediately.
