    Chill everything

    Place the bottle of sparkling wine and the juices in the refrigerator for at least 2 hours before serving; mimosas are best served very cold. Chill flutes in the fridge or freezer for 10–15 minutes before pouring.

    Prepare garnishes

    Slice an orange into thin wheels, reserve a few pomegranate seeds, cut a pineapple wedge if using pineapple-ginger juice, and skew or freeze a few cranberries if desired.

    Classic Orange Mimosa

    Measure 3 oz (90 ml) freshly squeezed orange juice into a chilled champagne flute. Slowly top with 6 oz (180 ml) chilled champagne or dry sparkling wine poured down the side of the glass to preserve bubbles. Do not stir. Garnish with an orange wheel on the rim.

    Pomegranate Mimosa

    Pour 3 oz (90 ml) chilled pomegranate juice into a chilled flute. Slowly add 6 oz (180 ml) chilled sparkling wine. The deep color will gently combine with bubbles; do not stir. Float 1/2 tablespoon pomegranate seeds on top or skewer a few on a pick for garnish.

    Pineapple-Ginger Mimosa

    Pour 3 oz (90 ml) chilled pineapple-ginger juice into a chilled flute. Slowly top with 6 oz (180 ml) chilled sparkling wine. For extra aroma, slide a thin slice or ribbon of fresh ginger into the glass or rest a pineapple wedge on the rim.

    Cranberry Mimosa

    Measure 3 oz (90 ml) chilled cranberry juice into the flute. Slowly top with 6 oz (180 ml) chilled sparkling wine. Garnish with a skewer of fresh or frozen cranberries and an optional orange twist for brightness. If cranberry juice is tart, add up to 1/2 teaspoon simple syrup to the juice before topping.

Service & Tips

    Serve immediately after topping so the drink is fizzy. Do not stir after adding sparkling wine—pour gently to maintain effervescence. If making a pitcher for a crowd, combine one part juice to two parts sparkling wine and keep chilled; add sparkling wine to individual glasses just before serving to preserve bubbles. Adjust sweetness with simple syrup to taste.
