Preheat oven to 400°F (200°C) if cooking bacon or ham in the oven. For bacon: place strips on a rimmed baking sheet lined with foil and a wire rack if available. Bake 12–18 minutes until crisp to your liking. For sausage links: cook in a skillet over medium heat with 1 tsp oil, turning frequently, 10–12 minutes until internal temperature reaches 160°F (71°C). For ham slices: heat 1 tsp butter or oil in a skillet over medium heat and cook ham 2–3 minutes per side until warmed and slightly caramelized.

If cooking bacon in skillet: heat a large skillet over medium, add bacon strips and cook 4–6 minutes per side, reducing heat if splattering, until crisp; transfer to paper towels to drain. Keep cooked meats warm on a plate tented with foil until serving.
Pancakes (makes 3 medium pancakes)

Make batter
In a medium bowl, whisk together 1 cup flour, 1 tablespoon sugar, 2 teaspoons baking powder and 1/2 teaspoon salt until combined. In a separate small bowl, whisk 1 egg, 3 tablespoons milk and 1 tablespoon melted butter (or oil) until blended. Pour wet into dry and stir gently until just combined; a few small lumps are fine. Let batter rest 5 minutes.

Cook pancakes
Heat a nonstick skillet or griddle over medium heat and brush with about 1 tablespoon oil or butter. For each pancake, pour about 1/3 cup batter onto the hot surface. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through. Transfer pancakes to a warm plate; keep warm in a low oven (200°F/95°C) if needed. Serve 3 pancakes with 3 tablespoons maple syrup.

Cook eggs (side)
Heat a nonstick skillet over medium-low and add 1 tablespoon butter. In a small bowl, beat 2 eggs with 2 tablespoons milk, 1 teaspoon salt and 1/4 teaspoon pepper until blended. Pour egg mixture into the skillet. Let sit undisturbed for about 20–30 seconds, then with a rubber spatula gently push set edges toward the center while tilting the pan so uncooked egg flows out—repeat until eggs form soft curds and are mostly set but still moist, about 2–3 minutes total for soft, creamy scrambled 'side' eggs. Remove from heat slightly before fully firming; residual heat will finish them. Alternatively, for fried eggs cooked 'side' (sunny-side): melt butter over low-medium heat, crack eggs into skillet, cover and cook 2–3 minutes until whites are set but yolks still runny.

Plate the two eggs beside the three pancakes and the three selected meats. Garnish with extra black pepper if desired and serve immediately.
