Vanilla Pastry Custard (Crème Pâtissière)

Whisk yolks and dry ingredients
While milk warms, whisk together 4 egg yolks, 1 tbsp granulated sugar, 1 tbsp granulated sugar (split as listed), and 3 tsp cornstarch in a medium bowl until mixture is pale and slightly thickened and no lumps remain.

Temper and cook custard
Temper the yolks by slowly whisking 1/3 of the hot milk into the yolk mixture to raise temperature without scrambling. Then pour the tempered yolk mixture back into the saucepan with the remaining milk, return to medium-low heat and cook, stirring constantly with a whisk, until the mixture thickens and comes to a gentle boil (about 2–3 minutes). Continue to cook and stir for 30–60 seconds to cook out the starchy taste; mixture should be like a thick pudding.

Finish and chill
Remove from heat and stir in 2 tbsp unsalted butter until smooth. Transfer the custard to a shallow bowl, press plastic wrap directly onto the surface to prevent skin, and cool to room temperature. Refrigerate at least 2 hours (or until fully chilled) to set.
Chocolate Fudge Ganache

Heat cream
Place 4 oz chopped semisweet chocolate in a heatproof bowl. In a small saucepan, heat 1 tbsp heavy cream until it just begins to simmer (do not boil).

Make ganache
Pour the hot cream over the chocolate and let sit 1 minute. Stir gently until smooth and glossy. Stir in 1 tsp unsalted butter and 1 tsp light corn syrup, if using, for extra shine and a fudgier texture. If mixture is too thick to pour, microwave in 10–15 second bursts, stirring, until loose enough to drizzle.

Cool slightly
Let ganache cool at room temperature until slightly thickened but still pourable (5–10 minutes). For a thicker glaze, chill briefly, stirring occasionally.
Whipped Cream (for garnish)

Chill a mixing bowl and whisk or beaters for 10 minutes in the refrigerator. Pour 1 cup heavy whipping cream into the chilled bowl, add 2 tsp powdered sugar and 1 tsp vanilla extract. Whip on medium-high speed until soft peaks form (takes 2–3 minutes). Do not overbeat; stop when cream holds shape but is still silky.
Assembly and Serve

Place warm pancakes, French toast or waffles on serving plates (2 each per serving if making 4 servings, see servings). Spoon or pipe a generous layer (about 2–3 tablespoons) of chilled vanilla custard onto each item.

Spoon or drizzle chocolate fudge ganache over the custard, covering center portion. If making for a stack of pancakes, layer custard between pancakes and pour ganache over top for a Boston Cream cake-style effect.

Add a dollop of whipped cream beside or on top of the ganache and garnish with fresh berries if desired.

Serve immediately so the ganache is slightly warm against the chilled custard and the base (pancakes/French toast/waffles) is warm.
