Method

Prepare bread and spread

    Toast and mix spreads

    Lightly toast the 2 slices of whole grain bread until just golden. In a small bowl, combine 1 tablespoon mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon olive oil, and 1/2 teaspoon lemon juice; stir until smooth.

    Spread the prepared mixture evenly on one side of each toasted bread slice.

Prep cheeses and veggies

    Cheese

    Select two cheeses (the recipe lists cheddar and provolone as examples). Place 1 oz cheddar and 1 oz provolone slices on one of the mayo-mustard–spread bread slices, arranging them to cover the bread.

    Avocado

    Scoop out the flesh of 1/2 a ripe avocado into a small bowl. Mash lightly with a fork until creamy but slightly chunky. Season with 1/8 teaspoon black pepper and 1/8 teaspoon salt. Spread the mashed avocado in an even layer over the cheeses.

    Cucumbers and tomatoes

    Layer thin slices of 1/4 English cucumber and 1/2 tomato over the avocado, overlapping slightly for even coverage.

    Onion, greens and carrots

    Add 2 tablespoons very thinly sliced red onion, 1 cup mixed salad greens, and 2 tablespoons shredded carrot on top of the cucumber and tomato. Distribute evenly so each bite will include a mix.

    Roasted pepper and olives

    Scatter 2 tablespoons roasted red pepper strips and 2 tablespoons sliced black olives across the greens.

Season and assemble

    Lightly sprinkle the layered veggies with the remaining 1/8 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon dried oregano. Add 1 tablespoon sweet pickle or pepperoncini slices if using, arranging them evenly.

    Place the second slice of bread, spread-side down, on top of the assembled sandwich. Press gently to compact the ingredients slightly.

    If desired, cut the sandwich diagonally. Serve immediately.
