    Prepare avocado spread

    Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash with a fork until mostly smooth but slightly chunky. Stir in the lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper. Taste and adjust seasoning. Set aside.

    Prepare bread

    If you prefer a toasted sandwich, lightly brush both sides of the wheat bread slices with the optional olive oil and toast in a skillet over medium heat or in a toaster until lightly golden, about 1–2 minutes per side in a skillet. Remove and let cool slightly.

    Mix sandwich condiment

    In a small bowl combine the light mayonnaise (or Greek yogurt), Dijon mustard, and remaining pinch of salt and pepper. Stir until smooth. This will keep the sandwich from becoming soggy and add flavor.

    Assemble sandwich

    Spread half of the avocado mixture evenly over one slice of bread. Spread the mayonnaise-Dijon mixture on the other slice. On the avocado-spread slice, layer the romaine leaves (tear larger leaves to fit), then arrange the ovengold turkey slices evenly across the bread (6 oz total). Top the turkey with tomato slices and cucumber slices in an even layer.

    Finish and serve

    Place the mayonnaise-spread slice of bread on top, press gently to compact. If desired, cut the sandwich diagonally. Serve immediately. Optionally serve with a side salad or a few extra cucumber slices.
