Make garlic butter
In a small bowl mix 1 tablespoon softened unsalted butter, 1/2 minced garlic clove, 1/2 tsp finely chopped parsley, 1/8 tsp salt and a pinch (1/16 tsp) black pepper until smooth and combined.

Make spicy mayo
In another small bowl whisk 2 tablespoons mayonnaise, 1/2 teaspoon sriracha, 1/4 teaspoon maple syrup and 1/4 teaspoon fresh lime juice with a pinch (1/16 tsp) salt until homogeneous. Taste and adjust heat or sweetness as desired.

Layer sandwich
Flip both slices so the untoasted sides are up. On one slice spread 1 tablespoon pesto evenly. On the other slice spread half of the spicy mayo (about 1 tablespoon). On the pesto side layer the 4 oz maple honey turkey evenly, then place 2 slices smoked gouda on top of the turkey. Add cooked bacon strips over the cheese and a leaf of lettuce or handful of arugula if using. Add optional pickled jalapeño slices or microgreens now if desired.

Grill closed sandwich
Carefully close the sandwich with the mayo-spread slice on top (butter-side-out). Return to the skillet and press gently with a spatula or weighted press. Cook 2–3 minutes per side over medium heat until bread is golden brown and cheese is melted. If the bread browns too quickly before cheese melts, lower heat to medium-low and cover the skillet for 1–2 minutes to trap heat.

Finish and slice
Transfer sandwich to a cutting board. Let rest 1 minute, then slice in half on the diagonal. Serve immediately with remaining spicy mayo for dipping if desired.
