Make the spicy mayo
In a small bowl combine 4 tbs mayonnaise, 1 tsp Sriracha, 1 tsp lemon juice and 1 tsp grated garlic. Whisk until smooth. Season with 1 tsp salt and 1 tsp freshly ground black pepper, then taste and adjust heat or acidity. Cover and refrigerate while assembling sandwiches so flavors meld.

Spread sauces
Spread 2 tbs pesto evenly over the bottom half of each roll. Spread 2 tbs of the spicy mayo on the top half of each roll (reserve extra spicy mayo for serving if desired).

Layer meats and cheese
On the pesto-coated bottom half, layer 4 slices of Black Forest ham per sandwich, arranging to cover the surface. Fold prosciutto slices and place 3 slices per sandwich on top of the ham. Top each with 4 oz (sliced) fresh mozzarella, distributing evenly.

Add vegetables and finish
Top the cheese with 1 cup mixed greens per sandwich, a few thin tomato slices, and a scattering of thin red onion if using. Drizzle each sandwich interior lightly with 1/2 tsp balsamic glaze (optional) and a small pinch of salt and black pepper to taste.

Close and press
Close the sandwiches with the mayo-spread top halves. If you prefer a warmed, slightly melted mozzarella, return sandwiches to the grill pan, press gently with a spatula or a weighted pan, and heat 1–2 minutes per side until cheese softens.

Slice and serve
Cut each sandwich in half on the diagonal. Serve immediately with extra spicy mayo on the side for dipping.

All ingredients listed in the Ingredients sections are used in the directions. Adjust Sriracha and salt levels to taste. For a lighter sandwich use half-fat mayonnaise or Greek yogurt in the spicy mayo.
