Drain canned chickpeas in a sieve and reserve the liquid (aquafaba). For very smooth hummus, optionally remove and discard the skins by rubbing chickpeas between your fingers or between two kitchen towels; this adds 5–10 minutes but yields a silkier texture.

Roughly chop the garlic clove and measure out tahini, lemon juice, olive oil, cumin, salt, and pepper so everything is ready to add.
Blend base

Initial tahini emulsion
In a food processor or high‑speed blender, combine the tahini and lemon juice. Process for 30–60 seconds until the mixture lightens in color and becomes slightly thick and whipped. This step creates a creamy emulsion that improves final texture.

Add aromatics
Add the chopped garlic, ground cumin, and about half the salt and pepper to the tahini-lemon mixture. Pulse 3–5 times to incorporate and break down the garlic.

Incorporate chickpeas
Add the drained chickpeas to the processor. Pulse 10–15 times until the chickpeas are coarsely broken down.

Add liquids and finish
With the processor running, drizzle in the 3 tablespoons of olive oil and 2–3 tablespoons of reserved aquafaba (or can liquid) a little at a time. Continue processing for 1–2 minutes, stopping to scrape down the bowl as needed, until very smooth. If the hummus is too thick or grainy, add cold water 1 tablespoon at a time (up to 2 tbsp) and process until you reach a spreadable, silky consistency.

Taste and adjust seasoning, adding remaining salt, pepper, or more lemon juice to brighten if needed.
Serve & garnish

Spoon the hummus into a shallow serving bowl, use the back of a spoon to create a shallow well in the center.

Drizzle 1 teaspoon (or to taste) of extra-virgin olive oil over the top, sprinkle paprika or smoked paprika across the surface, and scatter chopped parsley and toasted pine nuts if using.

Serve immediately with pita, fresh vegetables, or store in an airtight container in the refrigerator for up to 4–5 days. Bring to room temperature and stir before serving if chilled.
